Celebrate Cinco de Mayo A Little Early With Slow Food East End's Chef Series Featuring Colin Ambrose

Slow Food East End's (SFEE) Chef Series will continue with a special Cinco de Mayo edition featuring Colin Ambrose of Estia's Little Kitchen in Sag Harbor.

"Foodies come from near and far to savor the Hispanic flavors from Chef Colin Ambrose's charming and delicious Sag Harbor eatery, Estia's Little Kitchen - but on Sunday, May 2, all are welcome to Colin's home via Zoom for a Cinco de Mayo inspired cooking demo with one of the South Fork's beloved chefs," Maria McBride, Slow Food East End VP & Event Chair, explained.

Ambrose has been a part of the East End restaurant industry since 1991 when he opened Estia, a Greek diner, on Main Street in Amagansett. Eventually Estia closed, and Ambrose opened Estia's Little Kitchen in Sag Harbor. The eatery's menu is largely influenced by Mexican flavors.

The chef is a longtime advocate of the farm-to-table movement and his Sag Harbor-based eatery boasts its own large garden that Ambrose and his team utilize for many dishes. In 2016, Ambrose was lauded with the Slow Food East End Snail of Approval, an honor SFEE bestows to eateries and food producers that are committed to the sustainability of land, people and their business.

The Cinco de Mayo demo will not disappoint. "On the menu: Roast Duck Tamales with Mole Sauce!" McBride shared. There will also be a spring salad and hibiscus and ginger margaritas.

"Don't miss Colin's tips to create a subtle, sensational mole at home to pair with tamales made with Sagaponack-grown Foster Farms corn and to how to carve and roast the perfect duck, sourced at Long Island's Crescent Duck Farm, of course!" McBride shared.

Typically Ambrose grows his own corn for tamales, but unfortunately a storm destroyed his crop, so the evening will utilize corn meal from Marilee Foster's farm, where Ambrose and Foster grow Oaxacan green corn that they grind themselves.

In addition to the cooking demo, Ambrose will answer questions from attendees.

Chef Series: Cinco de Mayo with Colin Ambrose will be held on Sunday, May 2 at 6:00 p.m. Tickets are $50 for general admission and $40 for members of Slow Food. After signing up, the Zoom link and a link to the recipes will be sent.

"Chefs Series is a monthly program hosted by Slow Food East End to raise money for Feed the Forks initiatives," she added.
