On Thursday, August 13, Wölffer Estate Vineyard
partner and winemaker Roman Roth
will join forces with Seemore Meats & Veggies Founder Cara Nicoletti for a digital affair that pays homage to grilling and wine pairings.
For the Grilling with Roman [At Home Edition] with Guest Cara Nicoletti, from 6:00 p.m. to 7:30 p.m. Roth and Nicoletti will take attendees through a trio of pairings that are bound to please the taste buds.
We had the pleasure of chatting with Roth about this virtual Grilling with Roman edition, fall releases, his go-to summer pairings and more.
After virtually attending the HRHCare "Honoring the Hands" benefit, we think you need your own wine tasting show. What can viewers of Grilling with Roman expect?
This year, Grilling with Roman will be a fun virtual party with Seemore Meats & Veggie Sausages and Wölffer Wines! Throughout the event, guests will get helpful tips and tricks from Cara Nicoletti, the Founder of Seemore Meats & Veggies, on how to prepare the three-course meal. I'll be discussing the fantastic Wölffer Estate wines we're paired for each course, sausage and grilling. There is plenty of food and wine for four people, so it will be a fun-filled evening! Here is a look at the menu:
Roasted Cherry Tomato and Sausage Crostini & Grandioso Rosé 2019
Grilled Radicchio and Fennel Salad with Sausage Walnut Crumble & Summer in a Bottle White 2019
Grilled Sausage-Stuffed Clams & Caya Cabernet Franc 2017
Could you speak a bit about the menu and pairings?
My first goal in winemaking is to make the best, food friendly wines. With our climate here on the East End, we have a unique setting to make exactly that: one of the most food friendly wines in America. For a sneak peak into some of the pairing notes:
For the first course, pairing fresh local tomatoes in season and delicious sausage, we're pairing Grandioso Rose for a heavenly fresh dish. Second, The grilling flavors of radicchio and the sweet aromatic fennel with slightly charred sausage will be wrapped by the amazing aromas of our Summer in Bottle white. Last, but not least, for the third course, the grilled sausage stuffed clams is the perfect East End combination with Cabernet Franc, one of the best red wines on Long Island…what grows together, goes together!
Will the featured recipes be amateur chef-friendly - or do you have to have some skills in the kitchen?
When you have great ingredients you don't need elaborate recipes. Also, when you grill, one wants to keep it basic, quick, easy!
Besides the pairings showcased in the Virtual Grilling Event, what are some of your go-to summer pairings?
Striped Bass and the Wölffer Perle Chardonnay. Fluke Ceviche with the Grapes of Roth
Riesling. Fresh Guacamole with Wölffer Rose.
What wines are you perfecting at the moment and can we expect any surprises for the fall?
I am in the middle of blending the most amazing red wines from the 2019 vintage (the best we ever had…in 28 years), but we have to be patient as these special wines won't be ready until 2022.
This fall however, we are releasing three wines that we are all very proud off. Landius Pinot Noir, Grapes of Roth Virgin Berry Riesling and our flagship wine - the Christian Wölffer Cuvee. They can stand up to the best in the world.
When not at Wölffer, what are some of your favorite Hamptons spots?
At home, a dip in the pool after work, sunsets at Azurest Beach and practicing at Poxabogue Golf Course.
Ticket packages, which are $225, serve four people. The featured wine and sausage will be shipped directly to customer's doorsteps.
