Elevate Your Thanksgiving Turkey With A Cranberry Riesling Compote

Enhance your Thanksgiving meal with this easy to make compote created by Simi Winery's Executive Chef, Kolin Vazzoler, which pairs well with the 2011 Simi Sonoma County Pinot Noir.


 • 1 lb. Cranberries
 • 1 cup Sugar
 • 1/3 cup Apple Juice
 • 3 tablespoon Lime Juice
 • 1/3 cup Orange Juice
 • 1 pinch Salt
 • 1 sheet Gelatin (soaked in ice water)
 • 4 tablespoons Simi Riesling


1. Combine all ingredients and place over medium heat.
2. Bring to a boil.
3. Remove from heat and let cool.
4. Store in refrigerator.
5. Serve with a roast meat like roast turkey or chicken.
