Hampton Bays - There is a stunning new addition to the Hamptons restaurant panorama, Rumba on Canoe Place Road in Hampton Bays.
Self-described as "Island Inspired Cuisine and Rum Bar," the food will be featured in our next "Hamptons Dish" column, so we will concentrate on the bar aspect of this gorgeous new restaurant in this installment of "Mixology."

With a view of the bay, swirling overhead canvas fans and Caribbean style artwork, one steps inside and immediately feels transported to a tropical state of mind. The bar is a dozen seat ark that is warm and comfortable with a mirrored back bar and a cool, speckled marble bar top.
Fresh fruit hangs from all corners in netted bags and in a two tier weaved bar top basket. This is more than decorative, but illustrates the point that all the juices for the drinks are fresh squeezed daily. Although it may be a "Rum Bar" featuring island inspired cocktails, there is a full compliment of potent potables for whatever one might fancy in concoctions from the classical to the exotic, along with a wine list that features a real commitment to supporting local Long Island vineyards by the glass and the bottle.

David Hersh wants to fill his restaurant with year-round locals and to that end he has priced both his bar and restaurant well under Hamptons over-inflated seasonal standards. If he succeeds, we may very well have a beautiful bar with an exquisite view and great cocktails at an affordable price. Are we actually in the Hamptons?
We can only hope that some of his fellow restaurateurs take a realistic look at our economy and do the same thing. That aside, let's get down to this "Mixology" cocktail, a great classic Daiquiri for under $10.
Rumba bartender
Vikki Cimmino explained it in the simple and precise terms that define this classic cocktail, "First, fill a shaker with ice. Add three ounces of Cruzin Silver Rum, one and a half ounces of fresh squeezed lime juice and one and a half ounces of simple syrup. Shake it all up vigorously until the shaker is frosted. Pour it into a cold frosted
martini glass and garnish with a lime wedge. It is the simple, classic Daiquiri, but ours is always made with fresh squeezed lime extract, not bottled lime juice."
Ingredients:
• 3 oz. Cruzin Silver Rum
• 1.5 oz. fresh squeezed lime juice
• 1.5 oz. simple syrup
• A lime wedge garnish
