Hampton Bays - There is a stunning new addition to the Hamptons restaurant panorama, Rumba on Canoe Place Road in Hampton Bays.

Self-described as "Island Inspired Cuisine and Rum Bar," the food will be featured in our next "Hamptons Dish" column, so we will concentrate on the bar aspect of this gorgeous new restaurant in this installment of "Mixology."

With a view of the bay, swirling overhead canvas fans and Caribbean style artwork, one steps inside and immediately feels transported to a tropical state of mind. The bar is a dozen seat ark that is warm and comfortable with a mirrored back bar and a cool, speckled marble bar top.

Fresh fruit hangs from all corners in netted bags and in a two tier weaved bar top basket. This is more than decorative, but illustrates the point that all the juices for the drinks are fresh squeezed daily. Although it may be a "Rum Bar" featuring island inspired cocktails, there is a full compliment of potent potables for whatever one might fancy in concoctions from the classical to the exotic, along with a wine list that features a real commitment to supporting local Long Island vineyards by the glass and the bottle. Bravo!

Forget the Happy Hour schedule and the summer specials, which will be part of the bar's on-going profile, Chef/Owner David Hersh wants to fill his restaurant with year-round locals and to that end he has priced both his bar and restaurant well under Hamptons over-inflated seasonal standards. If he succeeds, we may very well have a beautiful bar with an exquisite view and great cocktails at an affordable price. Are we actually in the Hamptons?

We can only hope that some of his fellow restaurateurs take a realistic look at our economy and do the same thing. That aside, let's get down to this "Mixology" cocktail, a great classic Daiquiri for under $10.

Rumba bartender Vikki Cimmino explained it in the simple and precise terms that define this classic cocktail, "First, fill a shaker with ice. Add three ounces of Cruzin Silver Rum, one and a half ounces of fresh squeezed lime juice and one and a half ounces of simple syrup. Shake it all up vigorously until the shaker is frosted. Pour it into a cold frosted martini glass and garnish with a lime wedge. It is the simple, classic Daiquiri, but ours is always made with fresh squeezed lime extract, not bottled lime juice."

Ingredients:
• 3 oz. Cruzin Silver Rum
• 1.5 oz. fresh squeezed lime juice
• 1.5 oz. simple syrup
• A lime wedge garnish

I went to this restaurant two days ago for a friend's birthday dinner, and all I have to say is WOW! I had the daiquiri that was mentioned in the article and it was all kinds of tart, sweet, fresh and delicious. The fresh lime extract certainly plays a key role. As an appetizer I had Oysters Hampton. While I wish that there were maybe two more oysters (you're only served two), it was fried oyster resting on top of a bed of spinach dip in the shells they originally came in. For my entree, I ordered the crab cake salad, and it was absolutely sublime. The crab was delicious, and the salad greens, papaya, mango, and avocado were all fresh and tasty. Friends had the jerk chicken and the famous Dominican Ribs and declared both to live up to their reputations. My fiance was especially impressed with the sugar cane and soy salmon. Finally, for dessert I had the sundae. It was the perfect amount of ice cream, topped with melted fudge, unsweetened whipped cream, and the best part, pecans rolled in sugar, which made for a dessert that was decadent but was not so big you regretted finishing it. I fell in love with Rumba and its welcoming atmosphere. My fiance and I are already making plans to come back soon.

Kinda Reminded us of Barbados. Tacos were superb and the Rumba shrimp less the eyes and tentacles was absolutely delicious.(lol) Didnt care for the rice to much. A little on the mushy side but nothing a prickly pear martini and some rum punch couldnt wash down. The owner/ chef from time to time walked around to greet you and gather your opinion. I can't wait to go back Thursday for Reggae night... Thumbs Up Rumba!!!!

The food is really great.. but you got to leave your arm, first born and leg to pay the bill.. 2 apps, 3 dinners 2 drinks each. 230 not including tip!!!!!!!!

Once again we had delicious dinners at the most exciting new place at the shore, Hampton Bay, called Rumba!! The VIEW is spectaculer and the Restaurant servers are courteous and know their menu. David, the owner is very friendly and a great chef! Our server was Christina, so pleasant with a great smile and looking like she loved her job! Rumba will be our place to relax each week with friends and family. See you soon. :)

Fantastic! My husband and I tried Rumba for our anniversary dinner. Everything we ate - ahi tuna, dominican ribs and sugar/soy salmon with coconut risotto especially - was delicious, the rum punch reminded me of our island vacation last year, the staff is warm and welcoming and the location is great! They brought us champagne to toast our special day and the hot fudge sundae we shared - which seems like such a 'regular' dessert - was sooooo good! Fun place to hang out and great place to eat. I can't wait to go back and try more of the menu! Thanks to Chef David, Rachel and Erin for a wonderful 21st anniversary dinner!

I am a wine lover! Wine and food are my passion. The wine list here was AMAZING and the remark from Spencer a case of mis information-This was a 7-9 ounce pour while most are a 4oz. pour and this is no box of wine....He only serves the best! Keep it coming David.

Perfect location. Most important, delicious homemade food. Really! Our Waiters, Christina, was most helpful in our choices and also introduced us to Owner David's Lime Pie. Yummy. A Cheery group surrounded the bar where you can drink and eat. The restaurant is clean, neat, affordable and with outside seating a pleasant place to visit again. RUMBA is our place to go to eat, relax and enjoy the VIEW! It's like no other place on the water. We'll be BACK for sure!

This place is now my favorite place to go to. The food is so tasty and I'd have never tasted better ribs. My wife was amazed as well. The staff is superb, friendly, helpful, courteous, and I can't wait to bring my friends... No doubt in my mind reservations are going to have to be made very early on... Take advantage while you can... this place is a keeper!

This place is a winner! I met up with some girlfriends this past Friday night. The staff was very personable, the drinks were amazing, and the food was to die for! The ribs are the best in the Hamptons hands down and the homemade key lime pie is a must-have! The owner/chef, David, came by to greet us. I was very impressed and will return SOON!

David is a genius! This restaurant is phenomenal! So far I've tasted a solid half of the menu and I am yet to be disappointed. The duck empanadas are sensational. The staff is courteous and knowledgeable. The bartenders are competent and don't skimp on the pours. Their use of limon rum in their mojitos however is questionable. I nitpick. All in all though I only wrote this review because I was looking up their number and came across this site. I think that says it all.

Well....We have certainly waited a long time for such an Island Getaway in our beautiful waterfront back yard. The food here surpasses the views if that is possible. I have frequented this restaurant multiple times since the conception and the feeling is relaxing, fun and entertaining. The island flair is unmistakable and brings me back to St. Maarten! I can say that everyone should experience RUMBA!!!!! See you there.
