Southampton - Here's a recipe from our own
Mary Wilson, who shares a family favorite that can be used as a main or side dish. Spinach Pie is no stranger to many cultures. Just by adding your own family's favorite noshes to it can change its identity. "The Greek version adds feta, but this is more of an Italian version. It's great right out of the oven, but also great right out of the fridge, too." says Mary, who uses her father-in-law's version ("Thanks, Pop!").
Ingredients
• 1 pound frozen pizza dough
• 6 packages frozen chopped spinach
• Lots of chopped garlic (½ whole garlic bulb or more – to taste)
• 1 large onion, chopped
• ¾ cups Extra Virgin Olive Oil
• Salt and Pepper
• Flour
• 13 x 9 inch roasting pan
• Defrost pizza dough according to directions on package.
• Defrost spinach in colander and set over a large bowl overnight. Press out as much water as possible, place in large mixing bowl.
• Saute chopped garlic and onion in olive oil until slightly golden. Add to drained spinach, add salt and pepper to taste (spinach tends to need a lot of salt).
• Dust clean countertop with flour. Rub flour on rolling pin as well. Roll out one-half of the defrosted pizza dough into a rectangle slightly larger than the size of your pan. Carefully place into roasting pan, leaving edges hanging over at least one inch around all sides.
• Fill with spinach mixture. Roll out other half of pizza dough as above, place over roasting pan. Be sure this top layer hangs well enough over bottom layer. Roll the edges of the top layer of dough underneath the edges of the bottom layer of dough, pinching two edges together. With the tines of a fork, crimp the edges all around the pie. Poke holes in top of the pie every few inches to allow for steam to escape.
• Bake in a pre-heated 350 degree oven for approximately 30 to 45 minutes until golden brown, and the pie sounds hollow when you tap on it.
Note: This is a recipe that can be modified to your liking. You can add black olives or anchovies, while feta cheese gives it a Greek flair.
