Shrimp-Burger Salad: Healthy Dish For The New Year

Southampton - CBS Foods' offers up a healthy recipe for the new year - the Shrimp-Burger Salad.
Shrimp-Burger Salad
• 1 4 oz. cooked and chopped shrimp burger
• 2 Bunches of chopped Romaine lettuce
• 1 small sliced tomatoes
• 1/4 cup chopped red bell pepper
• 1 diced boiled egg
• 1/4 cup of feta or blue cheese crumbles
• 1 teaspoon black pepper
• 2 tablespoons chopped red onion
• 1/4 cup diced cucumber
• 2 tablespoons of drained and rinsed can of black beans
Raspberry Vinaigrette Dressing
• 1 cup of fresh raspberries
• 1/4 cup of vinegar
• 1/4 cup extra virgin olive oil
• 1 teaspoon of Agave for sweetener
• 1 Tablespoon of lemon juice
Salad Directions
In a large mixing bowl add chopped romaine, bell pepper, tomatoes, and diced cucumbers. Mix all ingredients until they are well mixed. Add salt, pepper, chopped boiled eggs and drained black beans. Continue to toss ingredients until well blended and crumble your choice of feta or blue cheese crumbles on top.
Vinaigrette Directions
Place raspberries, vinegar, olive oil, lemon juice and agave into blender. Blend all ingredients until the mixture is smooth.
