East Hampton - Though it has not officially opened yet, the Blue Parrot Bar & Grill in East Hampton has cracked open its doors a bit for random sneak previews.

"What we're doing in this preview is taking a few selected dishes and giving them a run and getting some feedback and once we feel the dish is there we're going to launch it. We should be officially open in about a week," said managing partner
Andrew Chapman. "The menu isn't exactly the same as the old Blue Parrot, but it is similar, we will serve Tex-Mex and authentic Mexican dishes. We are going to do common dishes, uncommonly well."
So far, the Chipotle Guacamole served with homemade tortilla chips, meatballs al Chipotle, The Blue Parrot Taquitos (three soft taquitos with your choice of chicken, bistec, or shrimp) and the Grilled tuna steak have made the cut to land on the menu.
The Margaritas will run $9 and will be served in a glass mason jar and dishes will cost from $6 to $27. The eatery only seats 55, excluding the outdoor patio and won't take reservations.
The renovations are minimal but tasteful. "We put in new banquettes in the back room, we put up these old vintage Mexican posters like "Viva Zapata" (which hangs alongside original
Richard Prince artwork). We've got lots of funky Mexican accessories and candles."
While there has been a lot of buzz about the owners of the Blue Parrot: Oscar-winning actress
Renee Zellweger, Grammy-award winning musician
Jon Bon Jovi,
Ron Perelman, the billionaire owner of Revlon and the co-owner of the newly-opened Monkey Bar (a joint venture with
Graydon Carter) and art gallery owner
Larry Gagosian. Chapman was reticent to elaborate on the owners roles, only saying "All of them are all involved to a certain level as silent partners but I'll be running the restaurant from day-to day."

"Blue Parrot was always a place everyone - locals and non-locals - like to go." Ron Perelman recently told
New York Magazine. "It was fun, funky, and cool. I would fly in on Friday, walk around town, and stop in for a margarita. Everyone was sad to see it go. I'm excited about the re-opening. I don't think Jews like Mexican food that much, but a lot of people are vegetarians and we are going to have cheese dishes. What are they called? Quesadillas."

A SoHo resident, Chapman has been in the restaurant business for 10 years and currently owns the bistro August that serves up regional European fare on Bleecker Street in the West Village, but his heart is on the East End.
"I'd come to Long Island every summer growing up. Sometimes I'd rent a place here [East Hampton] or in Amagansett or in Sag Harbor. I really love Long Island and if there's anything I can do to make it a better place that's exactly what I want to do."
And what does he do when he's not tending to the restaurant?
"I'm a nature guy, I like going to Indian Wells Beach (in Amagansett) and playing tennis," Chapman revealed. "I'm really grateful to be involved in a project like the Blue Parrot. It's really fun and exciting. It's meant a lot to a lot of different people and we're really happy to bring it back. Everyone wants good food and value for their money. Fresh food and value for money, that's always been my philosophy and that's what I want to make sure happens here."
Can we expect to see Bon Jovi and Ron Perelman jamming together at one of the Margarita joints famed karaoke night?
"I'm not sure about that," Chapman laughed "Karaoke nights will definitely be back as soon as everything works out here and the service is up to par. We can expect to see it in the next few weeks."

Having summered in East Hampton for many years, it's great to see the Blue Parrot back. Being from LA, where great Mexican food abounds, I can honestly say that the guacomole and the traditional tex/mex food were terrific, and the specials top notch. The laid back atmosphere was just what East Hampton's been missing. I'll definitely eat here again.
