Handmade Warm Mozzarella at Tutto Italiano - A Rare Find & A Fascinating Demonstration!
Chef Pasquale Langella of Tutto Italiano (74 Montauk Hwy, East Hampton, NY [631] 324-9500) demonstrates and serves handmade mozzarella in-store every weekend throughout the summer. Customers will be able to see this fascinating presentation on Fridays, Saturdays, and Sundays at 1 p.m. Langella, a native of Napoli, Italy, was taught how to make fresh mozzarella by his grandmother. The 30-minute process features just a few ingredients including whole milk, piping hot water (a staggering 150 degrees), and a handful of salt. Langella churns out about 22-25 pounds of mozzarella with each batch.

Matto (109 North Main Street, East Hampton, (631) 329-0200) a new authentic Trattoria, has just opened at the location of the former Pomodoro's in East Hampton. Featuring both indoor and outdoor dining, Matto is now open daily for lunch at dinner beginning at 11:30 a.m. Russo's authentic Italian menu offers appetizers in the $7- $12 price range, entrees $17- $25 and pizzas $15-$18. The thin crust pizzas are offered with a variety of toppings and unique combinations. Of course a variety of pasta dishes grace the menu. And all desserts are homemade featuring the traditional Italian sweets such as tiramisu, canolis, crepes, cheesecake and profiteroles. Matto offers a selection of wine, and beer, both international and local. Matto also offers the entire menu for take out.
